Recipes

Dried Fruit Bons Bons
Fruits & Roots Emmarentia

Ingredients:

200g Pitted dates Or similar
210g Raw cashew nuts Or similar (e.g. peanuts)
180g Dried peaches Or similar (e.g. mango)
195g Raisins  
  Desiccated coconut
Milk Chocolate
 

Method:

  • Blend all the ingredients together in a food processor except the coconut and chocolate which you can place in a separate bowl.
  • Blend until a chunky paste has formed.
  • Roll into the coconut or dip into melted chocolate.

Mango Ice Lollies (Makes 6-8)

Ingredients:

300ml Mango Juice
300ml Water
  Vanilla Yoghurt
4 Large strawberries
  Wooden skewers

Method:

  • Mix all three ingredients together and pour into lolly moulds.
  • Skewer four strawberries per lolly.
  • Place the skew into the mould with the strawberries before filling with the juice.
  • Place in the freezer, it should take about an hour for the lollies to set.

Mini Cheese and Pesto Wraps

Ingredients:

Sweet milk cheese
Basil Pesto
Hellmans Mayonnaise
Bag of lettuce
Whole wheat wrap

Method:

  • Cook the wrap in a skillet.
  • Spread the mayonnaise and the pesto on the whole wrap.
  • Shred the lettuce and spread across the whole wrap.
  • Roll up.

Mini Pizza
Fruits & Roots Emmarentia

Ingredients:

10g Dry Yeast
500g
Whole wheat flour
300ml
Luke warm water
2 tbsp
Extra virgin olive oil
1tsp Sea salt

Method:

  • Mix all the dry ingredients together.
  • Add the olive oil.
  • Add the water and mix until a dough has formed.
  • Knead for ten minutes.
  • Place into a well-oiled bowl and allow to prove until double in size.
  • Roll out the dough and shape into mini pizzas.
  • Preheat the oven to 200 degrees.
  • All the mini pizza shapes to rest for 10 minutes.
  • Add the toppings (tomato paste, cheese, olives, fresh tomatoes, mushrooms,
    nuts, et., etc.).

Guacamole and Nachos

Ingredients:

2 Large avocados
¼ cup
Olive oil
Spring onions
Coriander
1
Tomato
1 Juice from a lemon
Sea salt
Bag of nachos

Method:

  • Add all the ingredients to a food processor and blend until smooth.

Rainbow Juice

Ingredients:

Mango juice Or similar
Strawberry Juice
Or similar
Sweet Melon
Blend in a blender to make the juice

Method:

  • To start the rainbow juice, first pour in the mango juice. Then using a table spoon,
    pour in the strawberry juice onto the spoon in the glass, layering the strawberry juice
    on top of the mango juice. Repeat the process with apple juice.

Strawberry Shake

Ingredients:

160ml Strawberry juice Try and use juice from the Real Juice co.
100g Frozen Strawberries
60g Frozen Banana
½ tsp Ground cashews
1 tbsp Strawberry yoghurt
1 tbsp Rice milk powder
1 tbsp Fructose  
1 tbsp Honey  

Method:

  • Add all the ingredients to your blender.
  • Blend all ingredients until you have a smoothie texture.
  • Add the honey last.
